1 tablespoon olive oil
2 cloves garlic, minced
1 leek, diced
¼ teaspoon crushed red pepper
1 cup dry white wine
2 tablespoons Fine Vines® Alder Wood Artisanal Ketchup*
4 pounds fresh mussels
1 bunch fresh Italian parsley, roughly chopped
2 tablespoons unsalted butter
salt and pepper
Heat oil in Dutch oven over medium heat. Saute garlic, leek, and red pepper for three minutes. Add white wine and ketchup, stir, and simmer for two minutes. Add mussels and cover, cooking until mussels open, approximately five minutes. Add parsley and butter, simmering until butter is incorporated.
Discard any mussels that did not open. Taste broth and season with salt and pepper as needed. Serve with grilled bread.
